It's interesting how beans can be used to make various delicacies in it's different states. EGG MUFFINS
This has to be one of the easiest recipes on here... Do try it out
Ingredients for 6 muffins
- 3 large eggs
- Veggies, diced (I used carrots, green beans, onions and tomatoes)
- Chicken sausage, diced (optional)
- Black pepper and salt to taste
Method:
- Break eggs in a bowl
- Add veggies, seasoning and sausages, whisk all together
- Preheat oven at 200 degree Celsius, slightly oil muffin pan, (You can use spray oil)
- Pour in the egg mixture, not too full in each muffin cup
- Place in the oven for about 10-12 minutes
- Serve Hot and enjoy

HERBY COUSCOUS SALAD
Recently, I took some days off work and traveled with my family to Ekiti State, Nigeria (The land of Pounded yam, I bet the Yorubas will relate) I literally ate pounded yam all through my nights there and as a result gained 3 kg, since then I've been nagging about the extra fat. I decided to have salad all through this week (don't judge me, Unhealthy Fat is my enemy). After having proper veggies salad for two days, I got bored and decided to try something exciting. Healthy eating does not have to be boring and that's why many people have developed exciting ways to stay healthy and eat well.

HOW TO MAKE CURRY RICE
Welcome to another Habbies-How-To series.
So I have a confession about Basmati Rice. I don't know how to eat plain basmati rice (I wish someone else can relate with this.) So instead of rejecting plain rice, why not try making it a different way? I've tried jollof basmati, fried basmati rice and beyond reasonable doubts, in both scenarios, the taste was never displeasing to the mouth.
Here's another way to have your rice without all the "mende-mende"
Ingredients for 4 servings
2 tablespoon of canola oil3 garlic cloves, crushed
1 medium sized onion, diced
2 cups of basmati rice
Knorr cubes
fresh herbs (mints, parsley)
2 tablespoons of Curry powder
Steps:
- First, heat the oil in a pot, add the crushed garlic and onions. saute for about 30 seconds
- Now add basmati rice, the herbs, curry and other seasoning. Stir-fry for about 2-3 minutes
- Stir in water (preferably hot water), reduce heat and allow rice to steam so well, until well cooked.
- Serve with any stew/ sauce of choice.

Chicken Wings Infused with Rose Wine & Teriyaki Sauce
My craving for chicken these days, is out of this world. The whole of last week, I literally kept drooling on chicken pictures I saw social media platforms, the peppered, crispy, tendered, my oh my, maybe it was the coke infused chicken wings from last month that caused it o. I mean, that recipe was the bomb.
Here's another way of getting superb flavors in one chicken dish.
Ingredients:
- 1 cup of Eisberg Rose wine
- 3 tablespoons of Teriyaki sauce
- about 5 garlic cloves, crushed
- 1 medium sized onion, diced
- Salt and black pepper to taste
- 3 tablespoons coconut oil
- 2 tablespoons of honey
- 10 pieces of Chicken wings
- Juice from 1 lemon
Method:
- Mix all the ingredients in a pan except the wings and lemon. Heat for about 10 minutes and set aside to cool
- Wash the wings with lemon juice. Stir in the wings and be sure to coat all the parts well.
- Marinate for as long as you can (Mine was for about 2 days, I literally just left it in the fridge to chill )
- Pre-heat oven for about 5 minutes, arrange wings in baking pan and place in the oven for about 25-30 minutes.
- Just look at the gravy fro the sauce...Oh-So-Yummy.
- Enjoy wings with any dish of choice.
- I made a pepper sauce with the gravy and dipped the wings in the sauce. Bursting flavors all together.

JOLLOF RICE - SPECIAL
So, as I typed the Post-heading, auto-correct changed my "jollof" to "jolly"...can you imagine?? I wonder why there's no jollof rice in the dictionary yet. Jollof Rice as we all know is our "vintage dish" our very own "signature dish" at every event. I once saw a quote that goes thus; "A party without jollof rice is a meeting" and yes, it's absolutely true. Special Fried Rice and Oven Baked Chicken
Honey and Mustard Chicken
Sundays are for Feasting and that's why I've made this special delicacy...As usual, simple ingredients, simple steps and easy to follow.
1 large onion-sliced
Garlic-grated
1 red bell pepper, diced
Mint leaves
3 tablespoons of Mustard
3 tablespoons of Honey
Salt to taste
Black pepper to taste
Chicken stock
Olive oil
Preheat oven for 10 minutes at 200 degree Celsius
Ingredients for Baked Chicken
6 pieces of chicken drumsticks1 large onion-sliced
Garlic-grated
1 red bell pepper, diced
Mint leaves
3 tablespoons of Mustard
3 tablespoons of Honey
Salt to taste
Black pepper to taste
Chicken stock
Olive oil
Method:
For the Oven baked ChickenPreheat oven for 10 minutes at 200 degree Celsius

Nigerian Egusi Soup
This Egusi soup is a yummy delicacy in Yoruba and Igbo Land in Nigeria. It's usually eaten with variety of local swallows, like eba, pounded yam, oatmeal, wheatmeal, amala, staples like rice as well.
Ingredients - 6 servings
2 cups of egusi, blendedVegetables (ugwu/pumpkin leaves or efo igbo/eggplant leaves)
6 Tomatoes, 3 ata rodo and 1 large onions, blended
Onions, sliced
Smoked Fish, stock fish, kpomo
Beef, chicken, boiled
crayfish (fresh and/or smoked)
2-3 tablespoons of iru (locust beans)
salt, knorr cubes to taste
3 cooking spoon of Palm oil
Method:
- Wash and sieve vegetables, then set aside
- Soak roasted fish and stock fish in hot water for 5 minutes, rinse properly, remove bones and set aside. TIP: this process softens the fish
- Grate some onions, mix with the egusi, add a little water and stir to form a paste
- Heat 2 tablespoons of vegetable oil in a pot, when it's hot enough, add the onions and saute for 2 minutes, then add iru. Stir together and add the pepper mixture...Fry pepper for about 10-15 minutes
- Now add the orisirisi (the stock fish, kpomo, smoked fish, crayfish and even livestock), knorr, salt and allow to cook for 10 minutes. In between, stir to avoid the mixture from burning
- Pick lumps of the egusi paste and place in the stew mix (see image below)
- Add the 3 spoons of palm oil, reduce heat and leave for 5 minutes
- Finally, add the vegetables, stir all together, allow to steam for 3-5 minutes, in order to leave vegetables crunchy
