Fried Ofada Rice


Trying a new recipe is always fun, trying a new recipe on Sunday is always more fun, you get to taste and perfect flavors, all because, well, there;s time and it's rest day and it's cooking day, well, for me though. 

So I read about this recipe on Chef Fregz's Instagram page and I was totally in love with the innovation and voila, I decided to try it out. Here's my take on Fried Ofada rice, I was super excited about the turnout 

Ingredients for 2 servings

1 cup of cooked ofada rice
3 tbsp of oil
2 large carrots, diced
red, green and yellow bell pepper, diced
chicken franks and liver, diced
Onions, finely chopped
Garlic cloves, crushed
spring onions and green peas, diced 
salt and black pepper, to taste
dried parsley, curry and rosemary spices
2 tbsp of dark soy sauce

Ingredients for the Chicken

2 tbsp sesame oil
Onions and garlic, chopped
Dill seeds, rosemary, thyme leaves
Seasoning cubes
Teriyaki sauce
10 Chicken drumsticks
Lemon juice from 1 lemon

Method:

In a large pan, heat oil and saute garlic and onions for about 30 seconds.
With a wooden spoon, stir in all the veggies, add soy sauce, spices, salt, black pepper, liver and chicken franks, allow to steam for about 2 minutes
Add the cooked rice and stir properly, adjust taste and allow to steam so the juices in the veggies mix up with the rice.
Serve hot and Enjoy

Method for Chicken

Rinse drumstick with lemon juice
Mix all ingredients in a bowl.
Preheat oven, and grill chicken for about 20-30 minutes or until juices run clear
Serve and Enjoy
