Homemade Wheat-Potato Biscuits



These biscuits are super easy to make and healthy as well. Thinking of what to snack on at work or pack for the kids? This is sure a best bet for you. 



Ingredients

1 medium sized sweet potato
1½ cup of whole wheat flour + more for work surface
½ cup of milk
1 tbsp of apple cider vinegar
1/4 cup of sugar (or to taste)
1 tbsp of baking powder
1 tbsp of salt
5 tbsp of coconut oil


Method:

For Mashed potatoes:

  • Peel potatoes, cut into small sizes, rinse and boil until soft
  • Transfer potatoes into an empty pot and mash
  • The output should look like this:







Baking process:

  • In a bowl, mix potatoes, vinegar and milk together, set aside
  • In a mixer bowl, place flour, baking powder, salt and sugar, and mix together
  • Add coconut oil and beat on medium speed
  • Add the potatoes mixture and knead on medium speed for about 3 minutes
  • (If you don't have a mixer, use a bowl and knead with a turning stick/hand) I even used both method... (the bush woman in me was not satisfied with the mixer-knead,lol)
  • Preheat oven to 250°C and line a baking tray with baking sheet
  • Flour a wok surface, The dough at this point may/may not be wet, so use some flour to make it handy. then continuously fold the dough for about 3 minutes, then flatten the dough to about half-inch thick
  • Cut the dough into biscuits or shapes (if you have fancy cookie cutter/shapes)
  • Just pick a mole of the dough, flatten it on the surface and design it (I used a fork to get this pattern on my biscuits)
  • Transfer the cut biscuits onto the baking sheet and bake for about 10-12 minutes
  • Optional step: Brush the biscuits with melted butter, to give it a nice shine
  • Serve hot with syrup 
  • You can also keep fresh for about 2-3 days in a Ziploc or tight container
  • Enjoy
