PS: 'Macghetti' is a combo meal. Macghetti = Macaroni + Spaghetti
Ingredients
- 2 Garlic cloves, grated
- 1 large onion, chopped
- Leftover chicken stew or Tomatoes-cayenne pepper paste
- Boneless chicken, (cut into bite sizes)
- Chicken franks/sausages (optional)
- Carrots, diced
- Spaghetti
- Macaroni
Method
- Parboil Spaghetti and Macaroni (quantity of choice) for just 8 minutes, seive, and set aside
- Heat 2 tablespoons of oil and saute the garlic and onions for about a minute
- Rinse and glaze boneless chicken in spices of choice (I used basil and knorr chicken), then stir-fry in the hot onion for about 3 minutes or until its slightly cooked
- Now, stir in the leftover stew and fry for about another 3 minutes. (So if you're using tomato-cayenne paste, simply fry just the way you would, for jollof rice sauce)
- Add seasoning cubes and adjust taste, knowing fully well that leftover stew was seasoned previously
- Now add the parboiled pasta, stir properly and allow to steam for a minute or two
- Add in veggies (carrots, peas, e.t.c) and sausages, stir all together and allow to steam until the pasta is soft enough for you.
- Garnish and Serve...
