HOW TO MAKE CURRY RICE


Welcome to another Habbies-How-To series.

So I have a confession about Basmati Rice. I don't know how to eat plain basmati rice (I wish someone else can relate with this.) So instead of rejecting plain rice, why not try making it a different way? I've tried jollof basmati, fried basmati rice and beyond reasonable doubts, in both scenarios, the taste was never displeasing to the mouth.

Here's another way to have your rice without all the "mende-mende"

Ingredients for 4 servings

2 tablespoon of canola oil
3 garlic cloves, crushed
1 medium sized onion, diced
2 cups of basmati rice
Knorr cubes
fresh herbs (mints, parsley)
2 tablespoons of Curry powder

Steps:


  • First, heat the oil in a pot, add the crushed garlic and onions. saute for about 30 seconds
  • Now add basmati rice, the herbs, curry and other seasoning. Stir-fry for about 2-3 minutes
  • Stir in water (preferably hot water), reduce heat and allow rice to steam so well, until well cooked.
  • Serve with any stew/ sauce of choice.

JOLLOF RICE - SPECIAL


So, as I typed the Post-heading, auto-correct changed my "jollof" to "jolly"...can you imagine?? I wonder why there's no jollof rice in the dictionary yet. Jollof Rice as we all know is our "vintage dish" our very own "signature dish" at every event. I once saw a quote that goes thus; "A party without jollof rice is a meeting" and yes, it's absolutely true. Funny how this is my first jollof rice recipe on the blog, it's probably because I believe most people know how to prepare jollof rice.

Sometimes last year, I posted a recipe on egg fried rice, but as we all know and expect, the only thing that is constant is CHANGE. Giz-Kpomo Special


Giz-Kpomo Sauce is a special delicacy I came up with over the weekend...Really easy and fast to prepare. It's a combination of Gizzard and Kpomo...

Ingredients:

Tomatoes,onions habanero pepper (ata rodo)
Gizzard, boiled
Kpomo, rinsed
Garlic, grated
1 large Onions, sliced
Spring Onions
