Ingredients:
Tomatoes,onions habanero pepper (ata rodo)Gizzard, boiled
Kpomo, rinsed
Garlic, grated
1 large Onions, sliced
Spring Onions
Parsley
Canola oil
2 Knorr cubes
Salt to taste
Method:
Blend tomatoes, ata rodo and onions (not too smooth)Heat a pot, add enough oil, saute the gralic and onions for 3 minutes
Now pour the pepper mixture in the hot oil
Cut kpomo into bite sizes and add into the pot
Tip: Adding the kpomo on time softens it, as it'll cook longer
Fry for about 40 minutes
Then add the gizzard, add knorr and salt to taste
Stir and fry for 5 minutes again, then add spring onions
Allow to cook for another 3 minutes
Serve with favorite staple...Beans, Rice, Yam, Pasta, MoinMoin, etc
