Sundays are for trying new recipes...and eating "delish" Lunch We all have that "inner mind" that motivates us to try something new...My inner mind inspired this recipe and going forward, I've promised to listen more to that "side of me" So let's get to business:
Ingredients
Chicken marinated overnight in onions, salt, bouillon cube and other spices of choice2 oranges, one juiced, one sliced
1 lemon, juiced
Garlic cloves, grated
1 tsp of Olive oil
Paprika
White pepper
2 tbsp of Soy sauce (light or dark)
Onion Powder
Honey
Onions, sliced
Habanero (ata rodo) chopped
Basil and Parsley leaves (optional)
Directions
Preheat oven at 250 degree CelsiusIn a bowl, mix the lemon , orange juice and soy sauce
Whisk together the juice and the spices, add honey until you get the desired taste you wish
Place chicken in baking pan/dish, pour olive oil over the chicken
Spread the mixture over the chicken and then arrange the sliced orange and onions round the pan
Bake the chicken for about an hour, uncovered
TIP: Within the hour, it's advisable to check and see if there's need to add more juice mixture or maybe to flip the chicken the other way just to ensure all parts are evenly cooked.
