OKRO STIR-FRY

That moment when you're tired of the regular pepper sauce. And you don't even have to go extraordinary to get a tasty sauce for that staple on your mind...

Okro doesn't have to be for only swallows... Okro also needs that kind of love you give spinach or lettuce...lol. Try this stir-fry and let me know how it goes...

Ingredients: (2 servings)

  • Okro about (10 pieces), nicely sliced
  • Onions, finely chopped
  • Garlic, crushed
  • 1 Red, yellow and green pepper (optional)
  • Scotch bonnet, chopped
  • Seasoning cubes to taste
  • Cooked livestocks (beef, chicken or fish or all) cut into bite sizes
  • Carrots, sliced
  • Dried Prawns
  • 1 tablespoon of canola oil

Method:

  • Heat oil in a pan, saute garlic and onions for about a minute
  • On low heat, stir-fry the other ingredients for 3 minutes except okro
  • Add the okro, on low heat, add seasoning cubes and allow to steam for 3-5 minutes (this step leaves the okro crunchy and of course well-cooked as well)
  • Serve with favorite staple and Enjoy
