Spaghetti Carbonara - Habbies Special

Happiness is...eating spaghetti

Life is a combination of Magic and Pasta, not my words, but I totally agree with "Federico Fellini" on this.



If you agree, try this spaghetti recipe and be glad you did...

This Meal is an Italian special dish that basically combines eggs, cheese , black pepper, bacon and spaghetti in the best of ways and bursting flavors...


Ingredients: for 3 servings


  • 250g of Spaghetti (I used half of golden penny spaghetti)
  • 1 medium sized onion, chopped
  • 1 Scotch bonnet (ata rodo), chopped
  • Parmesan cheese, grated (quantity as desired)
  • Chicken franks, diced (you can use beef, chicken or any other livestock)
  • 3 egg yolks
  • 2 tablespoon of Black pepper
  • Garlic cloves, salt and knorr seasoning to taste
  • 1 tablespoon of butter (or canola oil)

Method:


  • In a large pot, boil spaghetti in salted water and half of the chopped onions. Boil until pasta is well cooked, sieve and set aside. Note: Don't pour the "spaghetti-water" away... 
  • Place egg yolks in a bowl, add black pepper, knorr and Parmesan cheese. Mix all together and set aside
  • Heat butter in a pan, saute the garlic for about 1 minute,  the flavor infuses into the butter in no time
  • Now saute the rest of the chopped onions and scotch bonnet for about a minute
  • Add the franks and allow to fry in the mix for about 2 minutes
  • Now, add spaghetti and some spaghetti water..Stir in gently and allow to steam for a minute
  • Stir in the egg mixture, continue to toss well and add extra splash of water until you get a shinny pasta..*winks*

  • Adjust tastes and serve immediately...You can garnish as you wish

For me, I garnished with more Parmesan cheese and Black pepper....and oh, the egg whites that wasn't needed, I made scrambled whites and used as garnish as well...*super yum*
