PAN FRIED BEANS FRITTERS - PANKARA


It's interesting how beans can be used to make various delicacies in it's different states. In it's whole state, we get a beans and sauce dish and even at it's peeled state, we get various meals like moin moin (beans pudding), gbegiri (blended beans soup). It's so amazing to know that even in it's different forms, beans has a lot healthy benefits, one of which helps to lower cholesterol as it contains fiber which plays an important role in controlling the blood cholesterol level.

OVEN BAKED MOIN MOIN - BEANS FRITTATA

 I've posted a recipe on moin moin previously (Moin moin muffins) This is however a different method. Moin moin can be served with salad (My favorite combo), pap, oatmeal, literally any staple of choice. Try this healthy option and thank me later. :)

EGG MUFFINS


This has to be one of the easiest recipes on here... Do try it out

Ingredients for 6 muffins

  • 3 large eggs
  • Veggies, diced (I used carrots, green beans, onions and tomatoes)
  • Chicken sausage, diced (optional)
  • Black pepper and salt to taste

Method:

  • Break eggs in a bowl
  • Add veggies, seasoning and sausages, whisk all together
  • Preheat oven at 200 degree Celsius, slightly oil muffin pan, (You can use spray oil) 
  • Pour in the egg mixture, not too full in each muffin cup
  • Place in the oven for about 10-12 minutes
  • Serve Hot and enjoy

EASY WHEAT PANCAKES


There's a quote that goes thus: "There's hardship in everything, except eating pancakes", well, you won't blame the writer because Pancake is always always "BAE" This is one easy and healthy pancake recipe you'll come across. Enjoyyyyy

Ingredients

1 cup of Wheat flour
Sugar to taste
2 cups of milk
1 Eggs
Coconut oil

Method

Mix all the ingredients except oil, in a bowl
Heat pan, add a tablespoon of oil and fry the flour mixture in portions
Serve hot with syrup or fruits.
Enjoy...

Tropical Smoothie Special...


We cannot emphasis enough that smoothies or let me say fruits are essential part of our everyday life...lol
Here's a simple smoothie recipe you should start your day with...

Ingredients for 4 servings

1 small sized pineapple
4 medium sized mangoes
2 apples
Ginger, to taste
Plain yogurt as base

Method:

Rinse all the fruits with vinegar and water
Cut into bite sizes and blend with plain yogurt as base...



Enjoy at any time of the day...

Egg Frittata


Egg Frittata is a very easy to prepare Italian dish. Basically, it's an egg based dish similar to omelette, just that ingredients such as beef, chicken, vegetables are added. It can be oven-baked or cooker-fried as long as there is a pan. It literally takes the shape of the pan used.

So I just got a new Halogen Oven that can literally do everything my gas cooker does, I mean all my worries and stress is all gone...Who would not grab such opportunity?  Allow me to show my marketing skills, please,*clears throat*
