It's interesting how beans can be used to make various delicacies in it's different states. In it's whole state, we get a beans and sauce dish and even at it's peeled state, we get various meals like moin moin (beans pudding), gbegiri (blended beans soup). It's so amazing to know that even in it's different forms, beans has a lot healthy benefits, one of which helps to lower cholesterol as it contains fiber which plays an important role in controlling the blood cholesterol level.
Now to akara, the traditional way we know is to deep fry the beans batter, but then, nowadays, we're
all about living healthy and cutting excess fat from our body, hence this healthy option of pan-frying the beans batter.
Here's my take on pan-fried akara. Enjoy
Ingredients
- 1 cup of beans
- 2 bell peppers
- 2 scotch bonnet (ata rodo)
- 3 tbsp of crayfish
- 1 large onion
- knorr chicken cubes, salt to taste
- 2 raw eggs
- Oil for frying
- Soak the beans and remove peel as usual
- Once beans is soft enough, blend beans, bell pepper, ata rodo and onions all together
- Now, add powdered crayfish, if you have the un-blended crayfish, you can add blend it with the beans puree
- Whisk the raw egg and beans puree together for about a minute
- In a pan, heat about 1 tablespoon of oil
- Measuring with a cooking spoon, pour the batter in the pan, one at once
- Reduce heat and allow to cook for about a minute. Tip: When bubbles are showing on the top layer, then it's safe to flip to the other side and pan-fry
- Repeat steps for the rest of the batter
