Coconut Rice and Fish Stew

Delish Dish of Coconut Rice
This nicely looking dish is simple enough for lunch/dinner. Its a perfect meal for a family event

Ingredients (2 Servings)
For Coconut rice

3 medium sized Coconuts
1 cup of rice
Shredded chicken breast (optional)
1 Red bell pepper
Salt to taste
1 small sized onions

For Fish stew

Blended pepper (not too smooth)
Vegetable oil
Salt to taste
Knorr Chicken


Wash, rinse and parboil rice
Break coconuts, cut and blend.
Sieve the juice and remove shaft
Dice onions and red bell pepper
Bring the blended juice to boil, and add bell pepper and onions
Add parboiled rice and salt to taste
When rice is almost cooked, add the shredded chicken.

Tip: Break coconuts carefully and get the water in it (It's rich in vitamins and minerals that is used to regulate blood pressure)

In another pot, add vegetable oil and be sure to make it hot

Add onions to the hot oil (it brings a tantalizing aroma)
Fry blended pepper, until satisfied
Add fish and salt to taste.
