Egg Fried Rice



So I almost didn't post this one, because it's quite an easy preparation coupled with the fact that I didn't get a perfect angle for my picture. But I did, anyways because i believe sharing is sexy *winks*

Ingredients

2 cups of parboiled rice
Boneless chicken or chicken breast cut into bite sizes
4 dized chicken franks/sausages
1 cup of shrimps (optional)
1 cup of chicken stock or water
2 cups of diced carrots
1 cup of green peas
1 cup of green beans
2 tablespoon of grated garlic
1 large diced onion
3 eggs (lightly beaten)
1 large red bell pepper
1 large green bell pepper
3 tablespoon of light soy sauce
2 knorr cubes
salt to taste
5 tablespoon canola/ vegetable oil


Directions



  • In a pan, heat 1 tablespoon of oil, add the grated garlic and onion for 3 minutes or until onions turn brown. Allow to cool and remove from pan
  • In a bowl, mix eggs, 1 table spoon of light soy sauce and a pinch of salt.
  • Clean pan, add 1 tablespoon of oil and fry the egg mixture. Remove from pan and dice the fried egg


  • In a pot, heat 3 tablespoon of oil, the dized vegetables and bell peppers, stir fry for 2 minutes
  • Add the dized chicken, franks and stock. Add salt, 2 tablespoon of light sauce and knorr cubes. Allow to cook for 3 minutes.
  • Add parboiled rice and onions. stir fry for 2 minutes
  • Finally, add dized eggs and shrimps, mix evenly and cover with foil. Allow mixture to steam for 2 minutes.
  • Garnish and Serve as desired.
            Enjoy!!!




  • I garnished mine with some chicken in sweet and sour sauce...Yummy!!!
