African Okro Soup


Gracious Okro Soup

Super Sunday Evening...
Hello Foodies, I hope the weekend has been "Food-filling"? Today, I got busy with this super special African soup.
Okro helps a great deal in different ways; for weight management, acts as a source of vitamins, improve hair problems among others.

Ingredients

Okro
1 cooking spoon of red oil
2 cups of Beef stock
4 tablespoon of grounded crayfish
1 Red bell pepper
Assorted livestock (beef, kpomo, shaki, liver)
Roasted Mackerel
Sliced vegetables (ugwu or spinach)
1 small sized onions
2 tablespoon of locust beans (iru)
Salt to taste
2 Bouillon cube (Knorr)


Method:

Slice/Cut okro into small pieces
Slice onions, and red pepper
Slice livestock or leave it as whole
In a dry pot, pour the red oil and heat for 20 seconds
Add the onions, sliced pepper and locust beans (this step produces a special enticing aroma)
Add the sliced okro and the beef stock and  allow to cook for 3 to 5 minutes until okro starts to draw
Add assorted meat, crayfish, mackerel, salt and knorr cube to taste, Allow to cook for a minute
Finally, add the vegetable and steam for 3 to 5 minutes
Serve

Tip: Vegetables are not to be cooked for long, so that we can still benefit from their nutrients

Okro soup is best served with Eba, Wheat flour or Pounded yam
