In it's whole state, we get a beans and sauce dish and even at it's peeled state, we get various meals like moin moin (beans pudding), gbegiri (blended beans soup). It's so amazing to know that even in it's different forms, beans has a lot healthy benefits, one of which helps to lower cholesterol as it contains fiber which plays an important role in controlling the blood cholesterol level.</span><br />

<li>Place in the oven for about 10-12 minutes</li>

If yes, get in here and try this yummy groundnut soup recipe. This soup is filled with wonderful flavors that would want you yearning for more. First time trial and I had no regrets at all.<br />

Ingredients for 6 servings</h3>
<ul>
<li>2 cups of roasted groundnuts</li>
<li>1 cup of pepper, onions and tomatoes blend</li>
<li>Assorted meat</li>
<li>Beef stock</li>
<li>Stock fish, dried fish</li>
<li>Handful of Efirin (scent) leaves, thinly sliced</li>
<li>Uziza seeds, about quarter cup</li>
<li>2 cooking spoon of palm oil</li>
<li>1 medium sized onions, sliced</li>
<li>Seasoning cubes to taste</li>
</ul>

Method:</h3>

<ul>
<li>Rinse assorted beef, and boil for about 30 minutes or until beef is tender, be sure to have some stock. Set aside, the beef and the stock</li>
<li>Put the nuts in a blender, add water and blend until you have a smooth paste, set aside</li>
<li>Blend the uziza seeds (The equipment used to blend dry ingredients, like crayfish)</li>
<li>Heat a pot and bleach the palm oil for about a minute, saute the onions and add the groundnut puree and stock. Mix well and allow to boil for about 15 minutes</li>
<li>Now add the pepper mix, assorted beef, stock and dried fish, uziza spice blend,season the soup and allow to boil for another 10 -15 minutes. At this point, you can start preparing your swallow or any prefered staple, It's just my little advice to newbies. Th aroma the uziza seed gives this soup is superb</li>
<li>After 15 minutes, add the efirin leaves and just steam the soup for additional 3-5 minutes and we're good to go.</li>
</ul>

Serve hot with any staple of choice.<br />
I had mine with oat meal fufu and it was splendid. My family loved it, dad even asked for more.<br />

<span style="color: #666666;">So I read about this recipe on Chef Fregz's Instagram page and I was totally in love with the innovation and voila, I decided to try it out. Here's my take on Fried Ofada rice, I was super excited about the turnout </span><br />

<span style="color: #666666;">Ingredients for 2 servings</span></h3>
<span style="color: #666666;">1 cup of cooked ofada rice</span><br />
<span style="color: #666666;">3 tbsp of oil</span><br />
<span style="color: #666666;">2 large carrots, diced</span><br />
<span style="color: #666666;">red, green and yellow bell pepper, diced</span><br />
<span style="color: #666666;">chicken franks and liver, diced</span><br />
<span style="color: #666666;">Onions, finely chopped</span><br />
<span style="color: #666666;">Garlic cloves, crushed</span><br />
<span style="color: #666666;">spring onions and green peas, diced </span><br />
<span style="color: #666666;">salt and black pepper, to taste</span><br />
<span style="color: #666666;">dried parsley, curry and rosemary spices</span><br />

<span style="color: #666666;">Add the cooked rice and stir properly, adjust taste and allow to steam so the juices in the veggies mix up with the rice.</span><br />

<span style="color: #666666;">Now, stir the liquid mixture into the dry ingredients, add the egg and mix all together to form a dough, Be sure to add extra flour, a little at a time until the dough is very handy and not sticky in the bowl. When you get a stretch, yet non-sticky dough, set aside for about 20 minutes</span><br />
<span style="color: #666666;">In the mean time, mix the sugar and cinnamon powder for the filling, also, generously oil a baking pan and set aside</span><br />

Recently, I took some days off work and traveled with my family to Ekiti State, Nigeria (The land of Pounded yam, I bet the Yorubas will relate) I literally ate pounded yam all through my nights there and as a result gained 3 kg, since then I've been nagging about the extra fat. I decided to have salad all through this week (don't judge me, Unhealthy Fat is my enemy). After having proper veggies salad for two days, I got bored and decided to try something exciting. Healthy eating does not have to be boring and that's why many people have developed exciting ways to stay healthy and eat well.<br />

Here's a simple couscous recipe, I call it a salad, you can call it a stir-fry... Enjoy<br />

Ingredients for 2 servings:</h3>

<li>Half cup of couscous grain</li>
<li>Small sized onions</li>
<li>Parsley, Mint and extra spices as desired</li>
<li>Diced vegetables (I used green beans, lettuce, apple and carrots)</li>
<li>Chicken breast grilled with herbs, diced</li>
</ul>

Method:</h3>

<li>In a pot, boil half cup of water, remove from heat, pour couscous in the water, cover and allow to couscous to absorb the water for about 3-5 minutes, set aside</li>
<li>Now heat a tablespoon of oil, saute onions and add veggies, dried herbs and spices</li>
<li>Add couscous to the mixture and stir fry for about a minute. Adjust tastes and serve.</li>

So instead of rejecting plain rice, why not try making it a different way? I've tried jollof basmati, fried basmati rice and beyond reasonable doubts, in both scenarios, the taste was never displeasing to the mouth.</span><br />

<span style="color: #666666;">1 medium sized onion, diced</span><br />
<span style="color: #666666;">2 cups of basmati rice</span><br />

<span style="color: #666666;">fresh herbs (mints, parsley)</span><br />

My craving for chicken these days, is out of this world. The whole of last week, I literally kept drooling on chicken pictures I saw social media platforms, the peppered, crispy, tendered, my oh my, maybe it was the <a href="http://habbiescookbook.blogspot.com.ng/2016/08/coke-infused-chicken-wings.html" target="_blank">coke infused chicken wings</a> from last month that caused it o. I mean, that recipe was the bomb.<br />

Here's another way of getting superb flavors in one chicken dish.<br />

Ingredients:</h3>
<br />
<ul>
<li>1 cup of Eisberg Rose wine</li>
<li>3 tablespoons of Teriyaki sauce</li>
<li>about 5 garlic cloves, crushed</li>
<li>1 medium sized onion, diced</li>
<li>Salt and black pepper to taste</li>
<li>3 tablespoons coconut oil</li>
<li>2 tablespoons of honey</li>
<li>10 pieces of Chicken wings</li>
<li>Juice from 1 lemon</li>
</ul>

Method:</h3>
<br />
<ul>
<li>Mix all the ingredients in a pan except the wings and lemon. Heat for about 10 minutes and set aside to cool</li>
<li>Wash the wings with lemon juice. Stir in the wings and be sure to coat all the parts well.</li>
<li>Marinate for as long as you can (Mine was for about 2 days, I literally just left it in the fridge to chill )</li>

<li>2 medium sized Sweet Potatoes</li>
<li>1 medium sized onion, thinly sliced</li>
<li>5 garlic cloves, crushed</li>
<li>Black pepper and salt for seasoning</li>
<li>Dried Parsley</li>
<li>2 tablespoons of Eisberg Non-Alcoholic Rose Wine</li>
<li>2 cooking spoons of canola oil</li>
</ul>

For garnish (optional)</h3>
<ul>
<li>Sausage (chicken frank), diced</li>
<li>Vegetables (Lettuce and Carrots)</li>
</ul>

For Sauce (optional)</h3>
<ul>
<li>1 tablespoon of butter</li>
<li>Half cup of Eisberg Non-Alcoholic Rose Wine</li>
<li>2 tablespoons of honey</li>
<li>1 teaspoon of plain flour</li>
</ul>

Method:</h3>
<ul>
<li>Peel and cut potatoes into desired shape</li>
<li>Boil in a pot of water for about 2 minutes, sieve, set aside and allow to cool</li>
<li>When potatoes are cool, heat the oil, and add the garlic and onions...allow to fry a bit without letting the garlic brown in colour</li>
<li>Add the potatoes and parsley and then fry until potatoes are light brown in color</li>
<li>Remove from potatoes from oil and set aside, at this point, the onions are already brown and not needed anymore. The onions has done it's job (infused into the potatoes)</li>
<li>Now, Clean the pan and heat just one tablespoon of oil, throw in the fried potatoes, add the rose wine and sausages (oh, the aroma of the flavors in the pan...bursting my brains :) ), stir for about a minute, carefully, in order not to crush/burn the potatoes.</li>
<li>Spice it up with black pepper and salt to taste</li>
<li>Serve and Enjoy with any sauce of choice...</li>

Just because I wanted to try something new, I put in some handy ingredients together and it sure formed a sauce... you too can try this:<br />

<li>Heat a pan, melt butter, add flour and mix well without getting any lumps.</li>
<li>Then add the rose wine and honey. Keep stirring for about 3 minutes</li>
<li>Serve immediately</li>

It only takes serious research to find out how to incorporate these creations into our daily meals . This week, I decided to play around with plantain.</span><br />

Then, I tried to make a swallow out of plantains as well. After-all, we make oatmeal swallow, wheatmeal swallow, yam swallow (pounded yam and amala), so why not plantain swallow???</span><br />

<span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">3 medium size plantain (ripe or unripe): I used the 1 ripe, 1 unripe and 1 inbetween...lol</span><br />

<span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">A Blender, pot and turning stick</span><br />

<li><span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">Cut plantain into small pieces and place in a blender.</span></li>
<li><b style="color: #666666; font-family: Georgia, "Times New Roman", serif;">Note:</b><span style="color: #666666; font-family: "georgia" , "times new roman" , serif;"> Remove the seeds in the middle of the plantain. I noticed that the seeds showed up </span></li>
<li><span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">Add a little water and blend until you have a smooth puree</span></li>
<li><span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">Pour paste into the pot</span></li>
<li><span style="color: #666666; font-family: "georgia" , "times new roman" , serif;">On a low heat, use a turning stick to stir the plantain paste</span></li>

<li><span style="color: #666666; font-family: Georgia, "Times New Roman", serif;">Start boiling, when it's about 10minutes, add chopped carrots (This allows the carrot remain crunchy afterwards)</span></li>

<li><span style="color: #666666; font-family: Georgia, "Times New Roman", serif;">Now, add the boiled minced meat, veggies, spices and seasonings, allow to fry for another 5-10 minutes (be sure to stir with a wooden spoon at intervals)</span></li>

Jollof Rice as we all know is our "vintage dish" our very own "signature dish" at every event. I once saw a quote that goes thus; "A party without jollof rice is a meeting" and yes, it's absolutely true.
